The Sauvignon Blanc is from their own organically-farmed vineyard in Stanford, near Hermanus. The fruit, in whole bunches, was pressed gently and allowed to settle overnight. Fermentation occurred spontaneously and proceeded at a low temperature for eight weeks before bottling. After five months on lees, the sparkling wine was disgorged. No additions.
