A nose showing signature purple flowers, mulberries, olives and cured meats leads to a generous palate of black and red fruits, rainbow pepper and a background earthiness. A stony, mineral texture adds precision and structure to the palate, while fine-grained tannins prolong the finish. A portion of the bunches were destemmed and transferred to fermentation tanks using a gravity system, allowing for whole berry fermentation, while the rest went in as whole bunch. Naturally fermented and aged in older French barrique for 12 months.
